Ingredients

- 🧄 3 cloves garlic minced

For Serving:

Instructions
Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook pasta according to package instructions until al dente.
- Reserve 1/2 cup of pasta water before draining.
Roast the Eggplant: (Option: Pan-fry instead)
- Preheat oven to 400°F (200°C).
- Toss eggplant cubes with olive oil, salt, and pepper.

Make the Tomato Sauce:
