Ingredients
  

  • 🥥 1 cup shredded coconut unsweetened
  • 🌰 1/2 cup raw almonds
  • 🍫 1/4 cup cacao powder or unsweetened cocoa powder
  • 🍯 6 Medjool dates pitted
  • 🥄 1 teaspoon vanilla extract
  • 🥄 1/4 teaspoon sea salt
  • 💧 1-2 tablespoons coconut milk as needed
  • 🍫 Dark chocolate chips or melted chocolate for drizzle, optional

Equipment

  • Food processor
  • Mixing bowl
  • Small scoop or spoon

Method
 

Blend the Ingredients:
  1. In a food processor, pulse almonds and shredded coconut until finely ground.
  2. Add dates, cacao powder, vanilla extract, and sea salt and blend until the mixture forms a sticky dough.
Adjust the Consistency:
  1. If too dry, add 1-2 tablespoons coconut milk and pulse again.
Roll into Bites:
  1. Using a small scoop or spoon, roll the mixture into bite-sized balls.
Chill (Optional):
  1. For firmer bites, chill in the fridge for 15 minutes.
Add a Chocolate Drizzle (Optional):
  1. Melt dark chocolate chips and drizzle over the bites for extra indulgence.
Serve and Enjoy!
  1. Store in an airtight container in the fridge for up to 1 week.
