Ingredients
  

  • 1 cup quinoa (rinsed)
  • 2 cups water
  • 1 cup mixed berries (blueberries, raspberries, strawberries)
  • 2 tablespoons honey (or maple syrup for vegan option)
  • 1/4 cup almond slivers or chopped nuts (optional)
  • 1/4 cup cup milk of choice (optional for drizzling)

Method
 

  1. Cook the Quinoa:
    - Rinse the quinoa under cold water to remove bitterness.
    - In a medium saucepan, combine quinoa and water.
    - Bring to a boil.
    - Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
    - Fluff with a fork and let cool slightly.
  2. Prepare the Bowl:
    - Divide cooked quinoa between two bowls.
    - Top each bowl with mixed berries.
  3. Drizzle and Serve:
    - Drizzle honey (or maple syrup) over the bowls.
    - Add almond slivers or your favorite nuts for crunch (optional).
    - Pour a splash of milk over the top for a creamier texture (optional).

Notes

  • Store leftover cooked quinoa in an airtight container in the fridge for up to 5 days.
  • Experiment with seasonal fruits like peaches or apples for a fresh twist.
