Cauliflower Mash with Chives

Ingredients
  

  • 1 large head cauliflower about 2 lbs, cut into florets
  • ΒΌ cup Greek yogurt or sour cream
  • 1 –2 tbsp olive oil or butter
  • 2 tbsp fresh chives chopped
  • Salt & pepper to taste

Method
 

  1. Cut cauliflower into florets and rinse well.
  2. Steam or boil until fork-tender, about 10–12 minutes.
  3. Drain thoroughly and transfer to food processor.
  4. Add yogurt, olive oil, salt, and pepper. Blend until smooth.
  5. Stir in chopped chives before serving.

Notes

  • For thicker mash, drain cauliflower longer and use less liquid.
  • Add roasted garlic for extra flavor.
  • Store leftovers in the fridge up to 3 days; reheat gently.
