Greek Yogurt Parfaits

- 2 cups plain Greek yogurt or flavored, if preferred
- 1 cup granola store-bought or homemade
- 1 cup mixed berries blueberries, strawberries, raspberries
- 1/2 cup fresh spinach chopped finely or blended into the yogurt
- 2 tablespoons honey or maple syrup optional
Prepare the Yogurt:- If using spinach, blend it into the Greek yogurt or mix it in finely for a subtle nutrient boost.- Sweeten the yogurt with honey or maple syrup, if desired. Layer the Parfaits:- In each glass or jar, start with a layer of yogurt, followed by a layer of granola, and then a layer of berries.- Repeat the layers until the glass is full, ending with a topping of berries and granola. Serve or Store:Serve immediately or cover and store in the fridge for up to 3 days.
- For meal prep, assemble parfaits in airtight containers and keep the granola in a separate bag to maintain crunchiness until ready to eat.
- Adjust the layers and portions based on the size of your serving containers.
