Ingredients
  

  • 2 cups plain Greek yogurt or flavored, if preferred
  • 1 cup granola store-bought or homemade
  • 1 cup mixed berries blueberries, strawberries, raspberries
  • 1/2 cup fresh spinach chopped finely or blended into the yogurt
  • 2 tablespoons honey or maple syrup optional

Instructions
 

  • Prepare the Yogurt:
    - If using spinach, blend it into the Greek yogurt or mix it in finely for a subtle nutrient boost.
    - Sweeten the yogurt with honey or maple syrup, if desired.
  • Layer the Parfaits:
    - In each glass or jar, start with a layer of yogurt, followed by a layer of granola, and then a layer of berries.
    - Repeat the layers until the glass is full, ending with a topping of berries and granola.
  • Serve or Store:
    Serve immediately or cover and store in the fridge for up to 3 days.

Notes

  • For meal prep, assemble parfaits in airtight containers and keep the granola in a separate bag to maintain crunchiness until ready to eat.
  • Adjust the layers and portions based on the size of your serving containers.
