Method
- Preheat oven to 350°F. Grease an 8x8 baking dish.
- Mix dry ingredients (flour, cocoa, baking soda, salt). In a separate bowl, mix eggs, maple syrup, applesauce, and vanilla. Combine wet and dry.
- Pour batter into dish and bake 18–22 minutes. Cool completely.
- Crumble cooled cake in a bowl. Add Greek yogurt gradually until mixture holds together.
- Form into 1-inch balls. Chill 1 hour or freeze 20 minutes.
- Dip lollipop sticks in melted chocolate and insert into balls.
- Melt chocolate chips with coconut oil. Dip pops and add toppings.
- Stand upright to set or lay flat on parchment.

- Make gluten-free using certified GF oat flour.
- For vegan option, use flax eggs and plant-based yogurt.
