Healthy Chocolate Cake Pops

Ingredients
  

For the cake:
  • 1 1/2 cups almond flour or oat flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 1/3 cup maple syrup or honey
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
For the binder:
  • 1/2 cup plain or vanilla Greek yogurt
For the coating:
  • 1 cup dark chocolate chips 70%+ cocoa
  • 1 tsp coconut oil optional
  • Toppings: cacao nibs chopped nuts, or shredded coconut
  • Lollipop sticks

Method
 

  1. Preheat oven to 350°F. Grease an 8x8 baking dish.
  2. Mix dry ingredients (flour, cocoa, baking soda, salt). In a separate bowl, mix eggs, maple syrup, applesauce, and vanilla. Combine wet and dry.
  3. Pour batter into dish and bake 18–22 minutes. Cool completely.
  4. Crumble cooled cake in a bowl. Add Greek yogurt gradually until mixture holds together.
  5. Form into 1-inch balls. Chill 1 hour or freeze 20 minutes.
  6. Dip lollipop sticks in melted chocolate and insert into balls.
  7. Melt chocolate chips with coconut oil. Dip pops and add toppings.
  8. Stand upright to set or lay flat on parchment.

Notes

  • Make gluten-free using certified GF oat flour.
  • For vegan option, use flax eggs and plant-based yogurt.
