Maple-Roasted Carrots

Ingredients
  

  • 2 lbs carrots peeled and cut into sticks or slices
  • 2 tbsp olive oil
  • 2 tbsp pure maple syrup
  • Salt & pepper to taste
  • Fresh herbs parsley or thyme, optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Peel and cut carrots evenly.
  3. Toss with olive oil, maple syrup, salt, and pepper.
  4. Arrange on rimmed baking sheet.
  5. Roast 25–30 minutes, stirring halfway, until tender and caramelized.
  6. Garnish with fresh herbs if desired.

Notes

  • Use rainbow carrots for extra visual appeal.
  • Add garlic, balsamic glaze, or red pepper flakes for variations.
  • Store leftovers up to 3 days in the fridge; reheat in oven for best results.
